Step 9

Our smoker needs an exhaust port as well so let's get that cut out. There are a couple different options for your exhaust/chimney. Once again, in terms of size, it depends on what your heat source is. It is recommended that you have an exhaust of 4-6" if you are using charcoal or some other type of combustion that requires air flow to fuel the flames.

For an electric burner like mine, the exhaust was simply to aid in temperature and smoke control. I was able to get my hands on a flat damper that worked beautifully. All I had to do was cut out holes in the exterior and interior walls and bolt the damper on. I then sealed around the edges using the silicone sealant.

 If you can't get one of these, another option is to install a chimney made of a sheet metal duct. These are readily available at your local hardware store. If you really want to go all out and be able to smoke from the comfort of your garage, you could extend your chimney and pipe your exhaust outside. Whichever method you choose, be sure you have dampers installed so that you can control the degree to which you are exhausting your air.

I also lined the gap between the holes with insulated furnace tape - again to provide a clear path for the exhaust to take.
